Tapas for Dinner

It was one of those nights where we just did not feel like making or eating a "real" dinner. So instead, I made this:


Blue corn tortilla chips, antipasto, red bell peppers, a soft garlic-herb cream cheese, chunks of mozzarella, kalamata olives, two types of rice crackers, and stewing beef seared on all sides in a hot skillet with a little salt and pepper.

Everyone enjoyed the snacky aspect of the meal and we all ended up eating only as much as we wanted. What would your version of this dinner look like? How would you include veggies and protein?
