A Latte & Granola

Well, I did it. I made granola and coleslaw and I created dinner with meat found in the freezer and it was wonderful!! That second latte did rescue the day!



Granola
Ingredients:
1 cup quinoa, ground (I use my blender)
7 cups rolled quick oats
1/2 cup mixed seeds (I used sesame, poppy, and flax)
1/2 cup sunflower seeds
3 cups almonds (whole, chopped, and ground)
1 can (400 ml) coconut milk
1 1/2 cups brown sugar
1 tsp pumpkin pie spice (or cinnamon)

Method:
In a large bowl, mix together the quinoa, oats, seeds, and almonds (I grind some in the blender, but stop before it becomes almond butter or burns out the motor).

In a separate bowl, mix the sugar, coconut milk, and pumpkin pie spice and whisk until the sugar is mostly dissolved. Put the wet ingredients into the dry and mix well until combined. This is the place to use a stand mixer, or to get a good arm workout.

Dump the works onto a lined cookie sheet or two and spread it out. Bake at 170*C or 340*F for an hour. Let the granola cool on the cookie sheet before breaking apart and storing in air tight containers. Will keep for about a month, but mine never lasts that long. Yields about... well, this much:


... about 6 litres.  I can hardly wait for breakfast!

  2. We must have been on the same page yesterday! The boys gobbled their granola this morning and I did too - it was yummy.
