Fish For Lunch

I am often surprised by how few people around me seem to eat fish, cook with fish, or have even tried fish.

On our last trip to the grocery store, we bought one package of each of the frozen fish options, where the fish is filleted and packed as is, right after cleaning.

So yummy and simple, it hardly feels like I am actually cooking!

RECIPE: Sole & Slaw

Ingredients:
2 fillets sole
pepper
1 apple, diced
5cm chunk of cucumber, diced
2 tsp mayo
1 tsp cider vinegar
1/2 tsp garlic

Method:
> if your fillet is frozen, run it under some warm water to wash off the water it was frozen in
> pepper the sole and put it in a hot skillet for 2-3 minutes on each side then set aside on a plate (fish done)
> in the bowl you will eat from, mix up the mayo, vinegar, and garlic (dressing done)
> dice up the apple and cucumber, then mix it in the dressing (salad done)
> plop the fish on top, sprinkle with kosher salt, and get your fork! (lunch ready)


And honestly, I had a hard time finishing this lunch - it was filling, satisfying, healthy, and really tasty.

  1. Looks sooo good. Your right fish is looked upon as an option once every few weeks but it should be all over our diet if possible! So good for us!
