Comfort Food

The other night on our way home, I asked the boys what they would rather have for dinner: 1) leftover turkey, mashed potatoes, peas, gravy, and salad... OR 2) soup with coconut milk, peanut, curry, and rice noodles. My 7-year-old asked for the soup and my 5-year-old asked for the curry noodles.

Amazing how comfort food for me when I was little would have been option 1, but now I find the more comforting food to be option 2, as do the boys.

Looks like too much work? It's actually incredibly simple.

Broth Ingredients:
3 litres chicken broth
3/4 cup peanut butter
1 tbsp curry paste
1 tbsp miso paste
1 can coconut milk

Other Ingredients:
- leftover chicken
- thawed peas
- any leftover steamed vegetable or fresh vegetable, chopped or sliced (cucumber is amazing in this soup)
- cooked rice noodles


Method:
> Pour the stock into the pot and stir in the peanut butter, curry paste, and miso paste

> In a separate pot, boil some water or prepare rice noodles as directed on the package

> Chop up the leftover meat and any veggies that are going into the soup

> Dole out meat and veg into each bowl and noodles, once they are ready

> A few minutes before serving, add the can of coconut milk to the broth but do not bring it back to the boil or the coconut milk will curdle; it does not affect the flavour, but looks less appealing

> Pour the broth over the ingredients in the bowl and enjoy!

Takes about 15 minutes to prepare. At the table, "personalize" your bowl with hoisin sauce, hot sauce, soya sauce, sweet chili sauce, or whatever else you might enjoy in this soup.
