Easy Dinner: Serve Over Rice

Last night, I needed an easy solution for dinner; something quick, simple, that my children and husband would all love, and that would also be good for school lunches today. Here was the solution:

RECIPE: Sweet & Sour Beef On Rice

Ingredients:
1 lb ground beef
1 large red onion, diced
1/2 a bag of brown mushrooms, chopped
((1 to 2 cups chicken or beef stock))
1/3 cup sweet chili sauce
1/3 cup soya sauce
1/3 cup fish sauce
3 tbsp brown sugar
1 tbsp ground ginger (or 2" fresh ginger, minced)
1 tsp ground garlic (or 2 cloves fresh garlic, minced)

Method:
> brown the ground beef with the ginger and garlic; once cooked, drain off the fat and set the meat aside in a bowl
> in the same pan, sauté the onions and mushrooms until the onions are starting to brown
> add the beef back into the onions and mushrooms along with the sweet chili sauce, soya sauce, fish sauce, and sugar
> if you are still making other parts of dinner, add in some stock, a little at a time to keep the meat saucy, but not soupy

Serve over rice with green onions, cilantro, parsley, or chopped fresh red bird's eye chilli peppers. Pairs nicely with a steamed vegetable of any kind.

We had it with cilantro over brown basmati rice and gently steamed asparagus on the side.
