Madras Roasted Vegetables

If you are looking for a simple, easy, quick, versatile vegetable side dish for anything saucy or curry-ish, THIS dish is for you.

RECIPE: Madras Roasted Vegetables

uniformly chopped roasting veg - here are a few ideas:
- potato
- yam
- carrot
- cauliflower
- green beans
- corn
- asparagus
- broccoli
- fennel
- parsnips
- onion
- bell peppers
- tomato

spices and oil
Ingredients:
bite sized cauliflower, squash, etc. chopped to similar sizes
2 tbsp vegetable oil
1 tbsp Madras curry powder (the yellow kind)
1 tsp ground ginger
4 green cardamom pods, crushed (or 1/4 tsp ground green cardamom)

my favourite Madras curry, found in India and my local Superstore

Method:
> turn your broiler on high
> put the oil and spices into a bowl and mix together
> place the cut veg into the bowl with the oil and spices
> toss
> spread evenly on foil lined cookie sheet
> broil for 5-7 minutes then turn over the vegetables; repeat twice or until the edges of the vegetables are starting to blacken


Serve with spiced rice, satay chicken, and tangy chilli sauce for an INCREDIBLE dinner!

  1. I do this (in all of its variations) about every other night now. Living as vegetarians, this is one of the easiest, most kid-friendly veg meals. (Or part of a veg meal). So, until I stop finding awesomeness in it, this is a staple. Thanks for teaching me how to do it!

  2. I am SO GLAD to hear that!! It IS a simple way to eat a lot of veg. This is also a magical combination with sautéed braised cabbage.
