Friends came over for lunch and a visit yesterday and it was delightful! The kids had a blast and my friend and I had a lovely visit.
Good company, good coffee, good food... excellent day!
RECIPE: Madras Sole & Salad
Ingredients:
4 sole fillets
1-2 tbsp Madras Curry Powder
1 tomato, diced
1 celery stalk, sliced
1 spring onion, chopped
6 leaves red lettuce
fresh dill
Method:
> chop and share all veggies between two bowls
> lightly spray a hot skillet with oil
> put down the sole fillets & fry for about 3 minutes
> flip the fish & sprinkle on the curry powder
> cook another 2 minutes
> serve the fish over the salad and salt & pepper to taste
It was so yummy, I might just have it for lunch again today!
